PAPPARDELLE pasta in a sausage and porcini mushroom sauce

Ingredients for 4 people:
250g Pappardelle - la Pasta di Aldo

for the sauce:
50g extra virgin olive oil
40g shallot
10g garlic
200g local sausages
80g red wine
300g fresh porcini mushrooms
1 bay leaf
10g dairy butter
30g Parmigiano Reggiano DOP - parmesan cheese

for the presentation:

10g chives or chopped parsley
10 g red wine cooked until reduced
10g extra virgin olive oil
4pc crispy porcini chips
